Ingredients
- 225g dried macaroni
- 2 cups frozen peas
- ½ cup soft breadcrumbs
- 2 cups sharp cheddar cheese, grated
- ¼ cup Asiago cheese, grated
- 3 cups milk
- 2 tbsp all-purpose flour
- 3 tbsp butter
- ½ tsp paprika
- 1 tsp garlic paste
- ¼ tsp turmeric
- ¼ tsp cayenne pepper
- ½ tsp garam masala
- ¼ tsp black pepper
- ½ tsp ginger, finely grated
- Salt to taste
South Indian Macaroni & Cheese
South Indian Macaroni and Cheese Macaroni and cheese is a typical Italian dish, but this special recipe gives it a desi twist.
This wonderful Indian pasta dish isn’t as creamy as other macaroni and cheese dishes, but it uses peas and breadcrumbs to add texture.
In addition to the flavor of spices, different types of cheese also add depth to hearty meals.
Method
Preheat the oven to 175°C.
Meanwhile, cook the macaroni according to package directions.
Put the peas in a sieve.
Once finished, drain the pasta in a colander and set aside.
Combine bread crumbs, Asiago cheese, and peppers in a small bowl and set aside.
In a separate bowl, mix together the turmeric, cayenne pepper, black pepper, garam masala, and salt and set aside.
Melt the butter in a large saucepan and add the garlic and ginger.
Cook and stir for 1 minute.
Add spice mixture and cook for 2 minutes.
Sift the flour into a saucepan and pour in the milk.
Stir constantly until the mixture thickens slightly and begins to bubble.
Stir in the cheddar cheese until completely melted.
Add macaroni and peas, mix and place in a rectangular baking dish.
Sprinkle the breadcrumb mixture on top and place in the oven for 30 minutes.
